Never Never - Ginache, McLaren Vale, SA
About the distillery.
Tim, George and Sean ventured into the spirits world with a desire to explore the areas of the industry less travelled or that exist as mere dreams. They, appropriately, named their distillery Never Never after the remote Australian outback few have experienced, if any at all.
Since setting out in a co-operative space they shared with breweries, their distillation exploration has proved fruitful with boundary pushing, juniper heavy releases (in a gin world that is leaning further towards fruit and other botanicals) such as their first release Triple Juniper Gin, followed by Southern Strength and Juniper Freak – all of which have been awarded world renowned accolades and become staff favourites at Carwyn Cellars. Their ethos has lead to their success and expansion adding their ‘Dark Series’ which includes an Australian Aquavit and Black Juniper Amaro.
In 2020 they relocated to McLaren Vale, opening a new venue that offers tours, masterclasses, tastings, and cocktails in the heart of wine country. Want to pretend you’re there? Just take in the rolling hills on their label which reflect the view from their distillery door, and you can pretend you’re sipping gin on their veranda.
About the gin.
This addition to the Never Never gin family is already taking home awards and is an expression of their location and the producers that surround them. Grenache is one of the dominant grapes planted in McLaren Vale, and the inspiration that led to this gin.
Initially released in 2020 as part of their Dark Series, it is now an annual release in celebration of each year’s wine harvest. Grapes are destemmed, gently crushed then combined with their flagship Triple Juniper Gin and left to macerate for 20 – 28 days before the pomace is removed and the gin is left to settle prior to packaging. The result is a gin bursting with bright fruit character and dark spice with the juniper backing that put Never Never on the map.

Ingredients
- 30ml Never Never Ginache Gin
- 30ml Apricot (Brandy) Liqueur
- 30ml Fresh Line Juice
- 1 Dehydrated Lime Slice for Garnish (included!)
Method
- Add all liquids into a cocktail shaker with lots of ice.
- Shake well until shaker is frosted!
- Double strain into a chilled coupette glass.
- Garnish with a dehydrated lime slice.
- Enjoy!
