Last time Fox Friday and One Drop collaborated on a beer, it was a staff favourite here at Carwyn! It has a refined resinous quality with a subdued lingering bitterness on the palate.

Grimm have been brewing beers at the forefront of innovation for more than 10 years now. One of the first to jump on the New England IPA (or Northeast-style IPA as they refer to it) and pastry sour trains, this concoction was first brewed in 2019 as the pastry sour rose to popularity. Drinking like a tropical icy pole, this one is sure to quench your thirst!
Fruited Barrel Aged Wild Ale | 5.0% | Saint Louis, MO America | ⭐
While people may get more hyped by Side Project’s barrel-aged stouts, they have taken their knowledge of beer, barrel and time and applied it to the world of wilds with this one. Packing a big hit of acidity before mellowing out, the addition of quince provides a soft, floral sweetness on a background of vanilla and oak. It finishes dry and earthy, just like the traditional styles of Europe.

Having started brewing in 2016, Josh and Michael at Black Arts showed incredible restraint, not releasing a beer until 2019 with 3 years’ worth of barrels to blend at launch. They started with a red wild and a golden wild (of which this is blend #3). This particular blend was packaged back in 2020 before being carefully cellared by the team here at Carwyn for a special occasion. Incredibly well balanced, this beer has stood the test of time and has great pomme fruit qualities. It has a very light funk with a rounded acidity.
Bourbon Barrel Aged Imperial Pastry Stout | 11.6% | Footscray, VIC Australia
Inspired by the Mexican dish, this bourbon barrel-aged stout is surprisingly restrained for a pastry stout in emulating the over-the-top flavours typically found in a mole poblano. Vanilla, chocolate, and oak dominate while there is a subtle heat on the back end of the palate. Another treat that has spent a bit of time in our cellar – like the dish this beer was based on, it evolves with age.

Mason Ale Works have been patient with this one. Very patient. Aged for a massive 24 months in Willet barrels, this incredibly decadent imperial stout had additions of cacao nibs and vanilla to produce a choccy Easter treat. Huge milk chocolate flavours with a warming quality produced by the extended stint in barrel. Think Kit-Kat, easter eggs and Milo!
Imperial Pastry Stout | 12.5% | Tartu, Estonia x St Petersburg x Moscow, Russia | ⭐
Pühaste opened its brewery doors in the city of Tartu back in 2011 after 5 years of tinkering by head brewer Eero Mander. ‘Trinity In Black’ is a collaboration with two Russian breweries (yes, a real life RIS – kinda) and is pastrified through the addition of tonka beans, vanilla and cinnamon. Sweet and fruity on a solid bitter body, this one is reminiscent of fruited coffee cakes.
Barrel Aged Wheatwine | 12.0% | Tallinn, Estonia x Freising, Germany
Part of Põhjala’s cellar series, this collaboration with Weihenstephan, the oldest brewery in the world, has been aged in three different port barrels (tawny, ruby, & white) before being blended to perfection. Super low in bitterness with dark caramel, dates and biscuits all very prominent.
Bourbon Barrel Aged Imperial Pastry Stout | 10.4% | Burlington, VT America | ⭐
The bourbon barrel aged big brother of their Dream Eater pastry stout, this has all the ingredients of a hearty breakfast. Cinnamon Crunch, vanilla, lactose and a healthy serving of coffee have been thrown in the mix to produce a surprisingly dry brew. Very reminiscent of a Black Russian with a side of coffee cake. It has a solid coffee bitterness with hints of liquorice and a warming quality from its time in barrel.
Rye Barrel Aged Imperial Rye Stout | 10.5% | Burlington, VT America | ⭐
Having managed to get our hands on the only 48 bottles commercially available in the country, we’re super excited to get this one in your hands! With a large portion of the malt bill being rye, Burlington have produced that chewy spiciness that we all know and love before dialling it up to 11 by aging in rye whiskey barrels for 12 months. Heavy dark caramel dominates while a spicy cola-like profile plays on the palate.

]]>The two biggest Estonian breweries to come out of commercialisation are Saku and A. Le Coq. Each brewery produces a variety of styles and share about 90% of the beer market in Estonia. Much like Australia, this large portion of the commercial market is owned by foreign companies. Also much like Australia, these foreign owned businesses are contributing to the rise of locally owned and produced craft beer in the country.
In 2011, the craft industry really started to take off when Põhjala began its journey to become one of the highest rated breweries in Estonia (sitting in second on Untappd, just behind Pühaste; the other Estonian offering in this box). Bringing in Chris Pilkington from Brewdog in Scotland, they released their first beer (an imperial Baltic porter called Öö) to the market in 2013. In 2015, they organised the first of an annual craft beer festival held in Tallinn and have helped support the industry grow to about 25 microbreweries dotted across the country today.
Estonia’s craft beer scene is very reminiscent of where Australia’s was 15 years ago. The future looks promising, with more and more microbreweries and brewpubs cropping up, poised to shape the nation’s beer culture in exciting ways. We can’t wait to see what comes next! Terviseks!

]]>One style that is especially divisive is the Sour IPA. Sour IPA is a somewhat new style that has gained popularity over the last decade. Some people put its origin in the early to mid 2010s in Colorado, through New Belgium Brewery with hopped sour Ales like ‘Hop Tart’ or ‘Le Terroir’, and some people include California with Almanac Beer Co. and their Hoppy Sours.
Nowadays there’s only a handful of breweries recognised for brewing and absolutely nailing the style, and within those, Hudson Valley Brewing from New York is the one that stands out the most.
The thing that has makes this style so divisive is the balance. Bitter and Sour most times do not get along, so in many attempts to make a Sour IPA we’ve seen a clash of flavours that leaves many disinterested.
Sour IPAs combine the tartness of a sour with the hoppy, fruity softness of a hazy IPA (mostly NEIPAs, which have lower bitterness). What sets sour IPAs apart from other IPAs is the addition of acidity, typically through kettle souring and fruit additions. Some even have lactose and other adjuncts, closer to a Milkshake IPA but with the underlying sourness.
Luckily for us Hudson Valley have made an artform of this style, and we’ve included an incredible example of this style in out latest edition of Hop Quest for you to enjoy!

To get us into the festive spirit, Seeker Brewing have created an absolute hop monster with not two, not three, but 12 different hops! Yes TWELVE! With each variety being put on a different day for 12 days straight. While the idea might sound overwhelming, the quality that these muso-brewers have shown throughout this year is still present in this brew. Massive fruit character, layer and layers of hop complexity, super well balanced, where you can almost taste each hop individually. The fanciest of deconstructed fruit salads.

The NSW hop masters make us all part of this experiment, as they come up with a beer with no defined beer style! Well, style or no style, this beer is hazy perfection! A beautiful peach colour and packed with heaps of flavour! Papaya, Coconut and Fuzzy peach with massive herbal vibes, this beer screams summer!

Yet another bangin’ IPA from Bracket! Honestly these folks have become one of the top producers of IPAs in the country. Featuring one of Bracket’s current favourite hops (Motueka), Rakau and a couple of other classic American West Coast hops which are finally seeing a resurgence in the Australian craft beer industry over the last year: Centennial & Chinook. Get both Stonefruit and Resinous character, the best of both worlds. Quite big in body but very well balanced an refreshing, with a lingering bitterness.

It’s been way too long of a time since we’ve seen Adroit Theory in the country!
Is this a metal and hardcore concert poster? Or maybe the newest album cover of a Death Metal band? No, this yet another badass artwork from the Adroit Theory team! You should always know that it’s definitely a hint of the kind of beer that you’re about to try: something that will rock your socks off. This is no exception. A massive dark beer that was conditioned on freshly roasted coffee beans. The aroma is surprisingly herbal, with almost a hint of chilli. In taste it just screams coffee cake and a fresh pot, with a bitter roasty finish. Surprisingly easy drinking! Be careful friends!

The Pōkeno Distillery (located in Pōkeno, NZ) is the largest distillery in Aotearoa, they have gathered multiple accolades and have put NZ whisky on the map. Now bring on Behemoth, a NZ brewery with worldwide recognition. Although known for their hoppy beers, they make fantastic big Imperial Stouts such as their “Drink Tomorrow” and “Bat$hit Crazy” series. This decadent & big beer will not disappoint! Oak is very present, with notes of Sherry and Red Table Grapes. Big roast & toast character from the malts with hints of toffee and a bitter finish.
Imperial Stout Aged in Balcones Barrels | 11.4% | Bodegraven, Netherlands | ⭐
We don’t really need to introduce these folks. De Molen has been part of our shelves for ages and every time we have a shipment by them you know you’ll get a surprise, with a variety of experiments with barrel and different styles. This beer showcases Balcones barrels (American Distillery) and it’s a delicate and complex beverage. Notes reminiscing of coconut and chocolate sponge cake, with a hint of liquorice and light umami. Absolutely delicious.
BA Blended Imperial Pastry Stout/Quad | 11% | Traralgon, VIC, Australia | ⭐
Get ready for dessert in a (golden) can! Our Traralgon mates have brewed a monster of a beer, blending Buffalo Trace Bourbon Barrel Aged Stout with Starward Barrel Aged Quadrupel, aged then for an extended time and blended with fresh Imperial Stout, with the addition of basically everything you could find in a fancy confectionary & bakery. These brewers really show their pedigree In this flavour bomb, executed beautifully. Notes of banana lollies, peach cobbler, vanilla slice and marshmallows. We’re so happy to see more and more of these unique type of beers in the market.

This great collab brew orchestrated by Forward Hops, was actually born from a visit by the Fox Friday brewers to the US about 2 years ago, when they were selecting hops during harvest. A friendship was born that was brought into fruition by the WA beer importers! WeldWerks are well known for their hoppy beers (especially their Juicy Bits IPA) and have won multiple accolades at both the Great American Beer Festival and World Beer Cup. For this beer the Fox Friday team even travelled to Greeley for the canning day, and they were pretty happy with the result. A perfect blend of stonefruit and citrus character with a bitter finish, but not very lingering. Bold body, but super refreshing. Simply a great collab!

We bring an unusual release by the Blue Mountains brewers, no, it’s not a big BA Imperial Stout or Double IPA, it’s something much more delicate… a Doppelbock. This is a Doppelbock on the lighter side of colour (which is not uncommon in Germany), and it has been aged in Sugar Cane Spirit Barrels by Brix Distillers in Surry Hills! It’s like Rum & Raisin, with notes of Dry peaches and Golden Syrup. Sultanas & Hot cross buns. Delicious and a lot easier drinking that you’d ever imagine.

Black Arts make some of the most delicate Wild Ales in the country, they’re not the kind of brewers that has a new release every single month, but we can count on whatever they release, it’ll be something truly great. This is no exception. The fruit component really shines, with a Sherry character that adds complexity and a puckering tartness. The hints of vanilla and oak are subtle. And a light acetic character makes this resemble to a Flanders Red Ale. The ultimate drink for the festive season.

The most iconic Belgian Pale Ale in the whole world! A classic one for homebrewers to try to clone. Originally made in 1931, this beer has a unique character due to the presence of the Brettanomyces Bruxellensis yeast strain, classic of Wild Ales, but this time purposely added to this Trappist brew for complexity and for extra dry character. This beer only arrives in Australia very few times a year, and never in huge quantities, and it’s always a treat. It’s never a bad time to drink an Orval, you’ll always discover something new. Notes of Banana bread, spiciness & earthiness on a light body. As always, this beer is highly carbonated, so careful when pouring!

You know that if there’s a Bottle Logic Stasis Project beer, it’s going to be something huge! The Anaheim brewers have joined forces with Maine brewers Odd by Nature in this Donut inspired massive Pastry Stout. Big bourbon character, with notes of toffee red apple, dark caramel, fudge brownie and macerated balsamic strawberries with Vanilla Ice cream. Honestly layers and layers of flavour. ]]>The Reinheitsgebot (also known as the ‘purity law’) in Germany is the OG example of an organisation (the government) protecting artisanal processes and traditional styles - ordered in 1516, this law requires that “nothing other than barley, hops, and water” be used to produce beer. The world of brewing has come a long way since then, with a huge range of ingredients and methods available, and while we love all the innovation, it’s great to see some passionate groups protecting traditional styles.
Another example is CAMRA (Campaign for Real Ale) in the UK, a consumer organisation that focuses on protecting the tradition of real ale (or cask ale), plus cider and perry. They not only support and promote the product, but also champion the pubs that serve these types of beer. Founded back in 1971 (likely over a few frothy pints of real ale), it is still going strong today!
In Belgium, not-for-profit HORAL - Hoge Raad voor Ambachtelijke Lambikbieren (really rolls off the tongue) or High Council for Traditional Lambic Beers, is a consortium of lambic brewers and blenders that work together to promote lambic beers, brewing, and culture in Belgium. Founded in 1997, particularly thanks to Armand Debelder from 3 Fontainen, the group has grown from 6 original members (3 Fonteinen, Boon, De Cam, De Troch, Lindemans, and Timmermans) to a total of 11 in 2024. One of the newest members is Lambiek Fabriek, a relative newcomer to the world of lambic that is slowly gaining more attention worldwide.
This edition of Ale Odyssey includes a couple of beers from HORAL members: Lindemans ‘Tarot Noir Dark Fruit Lambic’ and Lambiek Fabriek ‘Jart Elle Oude Kriek’. Taste the history and quality behind these beers, with the ease that people are looking after the tradition of such unique products. Cheers to these silent heroes!

]]>Terpenes are flavour and aroma compounds, common in many different material and compounds, and are very much present in beer. You’ll find them in small quantities in the malt but are much more noticeable in hops.
Some classic examples of Hop Terpenes are Myrcene (herbal and spicy), Limonene (citrus, fruity) and Humulene (woody, earthy). Many of these you’ll probably be very familiar with, but what you might not know is that over the last few years, another source of terpenes has been used in commercial beers: Cannabis.
Although it started in the US, in states where its consumption is legal or regulated, Cannabis producers have been able to extract only the aroma compounds of this plant which has allowed brewers from different parts of the world to add a layer of complexity to their IPAs and other beers.
Cannabis has more complex aromatic notes due to a greater number of different terpenes, many of them not present in hops, so it’s a great source of extra character! They can also accentuate the terpenes already present in the beer as well.
And no, drinking an IPA with these compounds won’t make you feel like you’re in a Steely Dan concert or make you desperately want to buy an extra-large meal at Maccas, it’s only for a delicious (and often dank) kick!

While the brewing of beer in what is modern day Belgium can be traced all the way back to the Romans, we typically think of a vastly different selection today. Having transitioned from the rudimentary Roman styles, through to Gruits (beers hopped with local flora, not hops) to the rise of the Trappists through the Middle Ages.
Speaking of Trappists, if you thought monks were all prayer and solemn faces, think again. Belgian Trappist monks are a monastic order that take their beer very seriously. Brewed using recipes passed down for centuries, these monastic orders have expanded their production drastically as they grew in popularity. These beers are usually strong and malty, with a nice yeast-derived character resembling fruit and spice.
Lambic beers tend to defy conventional brewing methods, relying on wild yeast strains to give a distinctive tartness and earthiness. The brewing of lambics has culminated in the Gueuze, a blend of lambics varying in age that has been perfected over the years.
Belgian Saisons (and Farmhouse Ales) were originally brewed for the farmers working the fields, providing sustenance and hydration during the long days. Saisons can be unpredictable, as they can range from full-on funk through to puckeringly tart.
Belgian witbiers tend to be spicier than their neighbours across the German border. Brewed using wheat as the key malt, they tend to have a refined ester-y character. The most famous brew in the category, Hoegaarden, is spiced with coriander and orange peel for some extra zest!
Belgian beer is a blend of history, skill, and culture. From Trappist ales to Saisons and Lambics, each style has its own very unique character. When you’re sipping a Belgian brew, you’re not just enjoying a beverage, but tasing centuries of tradition and craftmanship. So, raise your glass to Belgian beer. Santé!

]]>Delivering notes of passionfruit (crazy, I know), pink grapefruit and guava, Kohia Nelson can be used as a standalone hop product, or as is the case of ‘Passion Smash’, can used in conjunction with other new world hops to create a big ol’ juice bomb!
Creating Kohia Nelson required some creative ideas and forward thinking to make this crazy concept commercially viable. The passionfruit is dried before the seeds are removed. The husk left behind is then blended into the hops (with a little vitamin C thrown in to prevent oxidation) before pelletisation. For those of you passion-ate about home brewing, this results in a very low sugar level, allowing Kohia Nelson to be used in dry hopping with minimal secondary fermentation.
An innovative creation, Kohia Nelson showcases exactly what new world New Zealand hops are all about – fruity, fun, and full of flavour!

Ballast Point, one of the OG breweries of the American craft scene, have had a tumultuous time in recent years. Having been bought for the tidy sum of $1 billion at the end of 2015, Ballast Point was then sold off to Chicago-based brewery Kings and Convicts just before the world went into lockdown. Most recently, they have teamed up with Behemoth brewing in New Zealand to package their beers for the Australian market. This edition of Victory at Sea has a subdued coffee character with bourbon, Tim Tams and Vanilla on the nose.

Having traded under the name Chur this side of the Tasman for their first 6 years, Behemoth came to an agreement with Kaiju earlier this year to share the Behemoth trademark in Australia. Pokeno gold is a rich and coffee-y (is that a word?) Imperial Stout that has been aged in Pokeno whisky barrels – leaving plenty of whisky on the nose. It pours with a great head with notes of chocolate, vanilla and tannins with a warming booziness smouldering away.

Pime Suvi, or ‘Dark Summer’, has been carefully cellared with us since it was packaged almost 33 months ago! In that time, the tartness of the hand-foraged Native Davidson plums has mellowed and melded incredibly well with the smokey birch flavours imparted on the base stout. It’s like someone has taken what are objectively the two best pub desserts (sticky-date pudding and chocolate mudcake) and turned it into beer form.

Aged in Heaven Hill barrels, ‘Visions III’ is part of Range’s releases for the third year of their barrel program. It has a subtle, charred oak flavour that is lifted and sweetened by additions of cold drip coffee, vanilla beans, cacao nibs, and almonds. The aroma is reminiscent of marzipan and a hefty coffee, it’s like drinking your local bakery’s entire offering; almond croissants, vanilla slice, lattes, and all!
Triple Dry Hopped Hazy Double IPA | 8.2% | Newstead, QLD | ⭐
Range have absolutely nailed this ripper of a double hazy. The booziest brew they’ve ever triple dry hopped, this beer has a rating of 4.27 on Untappd – and we can see why! Thick and oh so juicy, the hops giving tropical fruits like papaya and passionfruit – this one could easily be mistaken for your morning glass of breakfast juice!
Barrel Aged Mixed Culture Saison | 4.0% | Saint Louis, MO America | ⭐
Side Project have been championing the barrel aged/fermented beer world for a decade now – and they don’t look like slowing down anytime soon! We have carefully cellared this beer since last year and we reckon it’s prime time to get it in your hands! Being mixed ferment, it is tart for a Saison, with a delicate aroma of fresh lemon and hay. The acidity has a great drive to it with plenty chardonnay-like richness to keep it from being overpowered.

Having only started operations in 2009, Gueuzerie Tilquin has fast risen to be one of the benchmarks of the Lambic world. This brew has been created by blending 240g of fermented rhubarb for every litre of lambic. This gives a mouth-watering tartness with almost a slight savouriness to it, finishing with a bit of funk and on light bitterness.

Originally brewed for Canvent 2021, our annual craft beer advent calendar release, Hargreaves Hill have rebrewed this beast due to popular demand. An amped up version of their ‘New World’ ESB, expect the classic raisin-y, toffee you expect from a typical ESB, with a fun hit of passionfruit delivered by the new world hops.

Hargreaves Hill have teamed up with nearby distillery Naught, to bring you something very special. Having spent a brief stint in Naught Distillery’s Sangiovese Gin barrels, this one has lots of juniper on the nose with a slight toastiness and some liquorice, while the palate includes a warming gin flavour with a very dry finish. All the fruitiness from the gin barrels combined with the toasted malts of the Schwarzbier make it feel like beer-y jam on toast!

Just weeks ago we helped launch the finale of Hawkers’ Winter of big, barrel aged vintage brews, with three Willet barrel aged beers. It appears Hawkers have kept the foot on the accelerator since and come back to drop a stone fruit bomb in this box! This Triple IPA is hopped to the teeth with mosaic, giving a deliciously juicy, rockmelon character that we know and love. This one should come with a warning label on it, as it’s dangerously smashable for such a high ABV!

Burlington Beer Co recently made its way to Aussie shores for the first time and, between the graphic cans and the liquid gold inside, we can’t get enough of them! Lucky for you, we managed to get our hands on the ultra-limited ‘Primal Carnage’ – so limited, in fact, that you are holding one of only 48 cans to make it to market this side of the Pacific! This monster is a bit of East meets West in the IPA world, with a deep resinous bitterness while tropical, fruity flavours play at the forefront. A big, bold, beast of an IPA, get it before it gets you!

]]>Harken back to the early 1800s in Edinburgh, and ye’ll find the birthplace of these fine brews. They sprung up in response to the Strong Ales and Barleywines that the English neighbours were cookin’ up down south. These beauties are big, bold and full o’ malt character, they’ve been known to leave many a lad oot his face!
Now, dinnae get confused by the names – Scotch and Scottish ales might sound like close kin, but they’re as different as neeps and tatties. Scottish ales are like a wee, sprightly young lad, sitting at a modest 3-5% ABV. But when it comes to a Scotch ale, haud onto yer hat! They can reach a whopping 10%, with a higher gravity that leaves ‘em sweeter and richer than the wee laddie Scottish ales.
While some modern brewers take a wee bit of inspiration from the whisky world by incorporatin’ peated malts, traditional Scotch ales are all about crystal malt. The malt is roasted to varyin’ degrees, givin’ ‘em a rich, dark caramel hue with a bonnie ruby glow. And when it comes to hops, they dinnae need to scream for attention. Delicate varieties like Fuggle or East Kent Golding are used to add a subtle touch.
Now, in recent times, brewers across the pond in the States have started dippin’ their toes into the world of Wee Heavy’s, and even some Aussie breweries are joinin’ the party. So, dinnae be a dafty – keep an eye oot for these brews, and ye might just stumble on some good craic!

]]>Think of alpha acids as the superheroes of bitterness, swooping in to give that fantastic kick we adore in a hefty WCIPA. Boil them in the wort, and they shape-shift to dissolve into the liquid. Sadly, they burn bright and fast, fading quickly and sometimes living long enough to become the villain, leaving us with rancid, cheesy flavours if not kept cool.
On the flip side, beta acids hardly dissolve during the boil. These quiet sidekicks make themselves known in beers with a long shelf life, providing a slightly harsher bitterness as alpha acids take a back seat.
Essential oils, though <3% of the hop weight, are the real MVPs - essential to the fruity allure of a NEIPA and the earthiness of an ESB. While these oils evaporate quickly in the boil, this is where dry hopping makes its appearance, allowing oils to disperse into the liquid without the high temperatures altering the alpha acids’ shape and creating extra bitterness.
The three main oils (although there are hundreds) are myrcene, caryophyllene and humulene. Caryophyllene and humulene were the stars of the show for centuries, being prized for their spicy, floral notes in just about every European and British style of beer, while myrcene has seen a rise in recent years with the Yanks opting for more citrusy and piney notes.

Picture a sun-drenched field of hop bines with cones basking on a warm afternoon vs a cold hill in the northern reaches of Europe – if you think you would have a hard time acclimatising, imagine how the hops feel! Weather patterns, altitude, soil conditions, even the local flora and fauna can have a significant effect on the flavours hops offer to a brew. A hop grown in the Yakima Valley in Washington has about as much in common with a hop grown in Bavaria as a gun slinging cowboy has with a lederhosen wearing pretzel chef.
This year, Hawkers have been experimenting with the effects of terroir on beer. Their latest endeavour digs into how harvest timing can effect flavour. ‘Early Harvest’ was created from hops picked at the beginning of the harvest, whilst ‘Late Harvest’ used the exact same hops from the exact same farm but picked ten days later (yes even ten days can have an effect!) After some highly technical scientific tests conducted by the hardworking team at Carwyn (i.e. enjoying a couple of cold ones on a Thursday afternoon) it appears that the younger hops give more under ripe fruit and white wine character, while the older hops had more time for more volatile aromatic compounds (I told you it was scientific!) to develop, and produce deeper flavours of tropical fruits like mango and peach.
So next time that one friend that only drinks wine from Bordeaux starts droning on about soil types and altitudes, you can tell them you’ve heard it all before and get back to sipping on a nice cold IPA!

This hazy beer has surprisingly dank notes provided by additions of Citra, Galaxy and Cashmere hops. This drop is smooth with slightly less bitterness than the usual West Coast IPA styles you would expect with this level of dankness.
